Healthy Sweet Potato Muffins

                          Delicious muffins from sweet potato Sweet potato in a muffins? If you are like me you will indulge in the clean, fresh taste in your mouth and the simple thought of it being healthy. Well, healthier than a normal flour-based muffin of course ;).  However in this recipe you use two odd ingredients as your base: Sweet potato and....PEANUT BUTTER! Yep, that's right. Peanut Butter. It tastes delicious and gives it a light and fluffy texture not too heavy on your stomach but just the right texture of a 'normal' muffin! Enjoy! Recipe below.  INGREDIENTS:  1 Cup of smooth unsalted, no sugar peanut butter  1/2 a cup of cooked and peeled mashed sweet potatoes  3 medium eggs  1 teaspoon of baking soda  1/2 a teaspoon of cinnamon  1/2 a teaspoon of ginger  1/2 a teaspoon of vanilla essence  1/2 a teaspoon of sea salt  1/4 a cup of  honey or ma...
