Healthy Carrot Cake muffins! Ingredients: 1/2 Cup of coconut flour 1 large carrot grated 1 medium peeled apple grated 1/4 a cup of raisins 3 eggs 1/4 a teaspoon of salt 1 teaspoon of cinnamon 1 teaspoon of baking soda 1/2 teaspoon of vanilla essence 1/4 a cup of milk 2 teaspoons of peanut butter Chopped nuts Instructions : 1. Preheat the oven to 180 degrees Celsius. 2. In a bowl, ADD flour, cinnamon,salt and baking soda 3. In a separate bowl add the eggs, vanilla essence, peanut butter and milk. Whisk all of this together. 4. Add the wet mixture into the dry mixture and whisk until everything is mixed. 5. Add the raisins, carrots and apples and whisk into the mixture. 6.
